This is a mash-up of the humble and the fancy - a dark chocolate digestive biscuit piled into a raspberry pavlova. It starts with that dark chocolate underpinned by biscuity sweetness but immediately you get a zing of juicy raspberry and an intense sweetness and creamy texture which reminds me of meringue.
