Being one of the first origins I ever tried, there is a special place in my heart for Columbian coffees. The bright citric acidity complimented by a caramel sweetness and nutty finish. This particular lot was sourced through Royal Coffee from 11 producers around Caldono situated at 1650-1800MASL. The coffee cherries are pulped, fermented, washed, and dried by each producer at their own micromills to ensure even processing through each of the various crops. Varietals Castillo and Columbia create a harmonious balance that I love about Columbian coffees.

This coffee is exactly what I love about washed Columbian coffees; clean, sweet, and balanced. When hot, hot lemon tea, praline, and vanilla dominate the flavour notes. The sweetness is pronounced, with a mellow lemony citric acidity, and a luscious candied nuttiness in the finish. As the coffee cools, the acidity becomes juicier, like pink lemonade and navel orange juice, along with a syrupy date-like sweetness. The finish is long and complex, with a cacao nib and roasted barley nuttiness.
